Better than a restaurant - cauliflower wings

Mom is back in the kitchen!!
we have been slowly transitioning into our new kitchen in Hawaii. it’s a big change from Our England kitchen but I’m learning the new dance.


tonight we made Buffalo cauliflower.
you like to eat the crispy cauliflower without the hot Buffalo sauce. Dunked in ranch.
we have been playing with batter recipes and feel like we have finally found a winner.


we also compared pan fried in oil vs. air fried.
turns out, air fried is way better. It tastes best and is way less of a mess.
Pan fried in oil takes so much time and made a mess.


These were a success! A must share!

batter :

1 1/2 CUP RICE FLOUR
2/3 cup tapioca flour
1 tsp salt
1/2 tsp pepper

mix it all together and then slowly add 1 cup cold water
look for pancake batter thickness
may need to add tiny bits more water to find that

cover the chopped cauliflower With the batter and pop it into the air fryer

I did 400 for about 15 min - I think
just keep checking till they are golden brown

remove from fryer and drop into a big bowl to cover/mix with Buffalo sauce.
we ( mom + dad , you like yours naked ) use our favorite primal sauce.
I let the sauce heat up on the stove top for a little while first.

served with celery and ranch!

Mother’s Day s’more muffins in Isle of Skye

 

we have been roadtripping Scotland and embracing the challenge to cook/bake in an RV. we woke up this morning in the beautiful Isle of Skye and went for a chilly hike to the top of a mountain. when we made it back to the RV, we were ready for something warm + sweet..
I had premixed some flour, coconut sugar, baking soda + baking powder. We used that to come up with a s’more muffin recipe!!
They may not look the prettiest but they taste AMAZING.

PESTO

SO YUM!
we made our best pesto yet.
you almost ate it all before cleanup.

here’s what we did:

on stovetop - we toasted
PINENUTS
PUMPKIN SEEDS
SUNFLOWER SEEDS
CASHEWS
once golden, we transferred them into the vitamix

on the same stovetop pan we then added
NOOCH - vit b12
toasted till golden brown, added to the vitamix

we then added
lemon
a little kale
tons of basil
garlic
salt
water

+ then we blended that into the most bomb pesto yet!
we added this to pumpkin + sage ravioli + asparagus

shepards pie

first we made our meat.
there are three things to consider when you make plant-based meat:
FLAVOR
TECTURE
NUTRITION
for FLAVOR we like to use our homemade meat seasoning
for both TECTURE + NUTRITION we use
tofo - protein
mushrooms - vit D
walnuts - omega fatty acids

start by coating the crumbled tofu in meat seasoning
(meat seasoning = soy sauce, liquid smoke, montreal steak seasoning, nooch, oil)
bake tofu till crispy
chop mushrooms and add to blender with walnuts
add everything to stovetop and cook to desired consistency.
next layer was veggies - chopped carrots, peas + corn
topped off with mashed potatoes - creamy and cheezy.
mashed with butter, yogurt, nooch, miso, salt + pepper
finish with a sprinkle of paprika + bake 180 c

plant based meat = tofo, mushrooms, walnuts + soy sauce, liquid smoke, nooch, montreal steak seasoning
